My Story

Hi! I'm Gianna Carson. My husband and I live with our three kids in Bryson City, North Carolina where I own and operate Dolce. We travel often and bring back influences to include in our food and drink selection at Dolce. You can follow along with us on our various social media platforms.

I grew up in Western North Carolina but my dad's family is from Sicily and my mom's family is from Ireland. I have a BS in Marine Biology from UNCW and a middle school teaching degree from WCU. I also concentrated in Chemistry, Environmental Science, and Spanish in college at UNCW where I ran track and cross country. I worked as an environmentalist at an engineering company and as a Science teacher and coach before I decided it was time to start my own venture. Kinda wishing I had a buisness/marketing or baking degree but I guess I'm learning as I go!

I love to travel, eat, and drink coffee. My love of these things pulled me in to entrepreneurship. We opened Dolce in 2012 as a bakery then quickly added house roasted coffee and brunch items. In 2019 we further expanded to include vacation rentals above Dolce.
